  • 1 teaspoon vanilla extract

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup old-fashioned rolled oats, 1/2 cup mini chocolate chips, 1/4 cup ground flaxseed (if using), and 1/4 teaspoon salt (if needed). Stir to evenly distribute.
  2. Add the wet ingredients: Pour in 1/2 cup creamy peanut butter, 1/3 cup honey, and 1 teaspoon vanilla extract. The mixture will be sticky.
  3. Mix until combined: Stir with a spatula or spoon until every oat is coated. This takes about 1-2 minutes. The mixture should hold together when pressed between fingers. If too dry, add a teaspoon more honey; if too sticky, add a tablespoon more oats.
  4. Chill the mixture (optional but recommended): Refrigerate the bowl for 5-10 minutes to make the mixture firmer and easier to roll.
  5. Roll into balls: Scoop about 1 tablespoon of the mixture and roll between your palms to form smooth balls. You should get about 16-18 balls. Dampen hands slightly with water if mixture sticks.
  6. Place on prepared baking sheet: Set each ball on a parchment-lined baking sheet, leaving a little space between them.
  7. Chill again (optional but helpful): Refrigerate the baking sheet for 15-20 minutes to help the balls set firmly.
  8. Serve or store: Transfer to an airtight container and store in the refrigerator for up to 2 weeks, or freeze for up to 3 months.

Notes

Use room-temperature peanut butter for easier mixing. Toast the oats for extra flavor (optional). Don’t skip the chill time for best texture. Keep hands slightly damp when rolling to prevent sticking. These get better after a day or two in the fridge as flavors meld.
