  • 1 1/2 cups whole wheat pastry flour
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 large egg, room temperature
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 2 tablespoons melted coconut oil (for coating)

Instructions

  1. Reduce the apple cider: Pour 1 cup apple cider into a small saucepan and bring to a boil over medium-high heat. Reduce heat to a simmer and cook for 12-15 minutes, stirring occasionally, until reduced to about 1/3 cup. Set aside to cool.
  2. Preheat oven to 350°F (175°C). Lightly grease a donut pan with coconut oil or non-stick spray.
  3. Mix dry ingredients: In a large bowl, whisk together whole wheat pastry flour, coconut sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Mix wet ingredients: In a medium bowl, whisk together cooled reduced apple cider, egg, melted coconut oil, applesauce, and vanilla extract until smooth.
  5. Combine wet and dry: Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined. Do not overmix.
  6. Fill donut pan: Transfer batter to a piping bag or zip-top bag with corner snipped off. Pipe batter into prepared donut pan, filling each cavity about 2/3 full.
  7. Bake for 10-12 minutes, until golden brown around edges and a toothpick inserted into center comes out clean. Cool in pan for 2-3 minutes, then transfer to a cooling rack.
  8. Make coating: In a shallow bowl, mix 1/4 cup coconut sugar with 1 tablespoon cinnamon. Place 2 tablespoons melted coconut oil in a small dish.
  9. Coat donuts: While donuts are still warm, brush each with melted coconut oil, then dip into cinnamon sugar mixture, turning to coat evenly. Tap off excess.
  10. Serve warm or at room temperature. Best eaten the same day.

Don’t skip reducing the apple cider—it concentrates the flavor. Use room temperature ingredients for best results. Coat donuts while warm so the cinnamon sugar sticks. For gluten-free, use a 1:1 gluten-free baking flour blend. For a maple glaze, skip the cinnamon sugar coating and drizzle with a mixture of 1/2 cup powdered sugar, 2 tablespoons maple syrup, and a splash of milk.
