Instructions

  1. Make the pastry dough: In a large bowl, whisk together the flour and salt. Add the cold butter cubes. Using a pastry blender or your fingertips, cut the butter into the flour until the mixture looks like coarse meal with some pea-sized butter pieces remaining.   2. Preheat and prep: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper. Peel the apples and core them, leaving the bottom intact so they have a little cup to hold the filling.

  4. Roll out the dough: On a lightly floured surface, roll the chilled dough into a 12×18-inch rectangle, about 1/8-inch thick. Cut it into six 6-inch squares.

  8. Make the caramel sauce: In a small saucepan, combine the sugar and water. Stir gently to moisten the sugar, then place over medium heat. Do not stir once it starts boiling—just swirl the pan occasionally. Cook until the mixture turns a deep amber color, like a copper penny, about 8-10 minutes. Remove from heat and carefully whisk in the warm cream (it will bubble up violently—stand back). Add the butter, vanilla, and salt, and whisk until smooth.
