Spooky Roasted Garlic Veggie Tray with Easy Ranch Dip

A festive Halloween veggie tray featuring roasted purple cauliflower, orange bell peppers, and green beans, served with a creamy roasted garlic ranch dip. This crowd-pleasing appetizer is quick, easy, and packed with flavor.

  • 1 head purple cauliflower, cut into florets
  • 2 orange bell peppers, sliced into strips
  • 2 cups green beans, trimmed
  • 1 cup baby carrots
  • 1 large red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 head garlic
  • 1 teaspoon olive oil (for roasting garlic)
  • 1 cup plain Greek yogurt (full-fat recommended)
  • ½ cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the head of garlic to expose cloves, drizzle with 1 teaspoon olive oil, wrap in foil, and roast for 30-35 minutes until soft. Let cool.
  2. While garlic roasts, wash and cut cauliflower into florets, slice bell peppers into strips, trim green beans, cut red onion into wedges, and leave baby carrots whole.
  3. In a large bowl, toss all vegetables with 3 tablespoons olive oil, garlic powder, smoked paprika, salt, and pepper. Spread in a single layer on a baking sheet.
  4. Roast vegetables for 20-25 minutes, flipping halfway, until tender and lightly charred.
  5. Squeeze roasted garlic cloves from skins into a small bowl and mash into a paste. In another bowl, combine yogurt, mayonnaise, lemon juice, dill, parsley, onion powder, garlic powder, and mashed garlic. Stir well, season to taste, and refrigerate for at least 15 minutes.
  6. Arrange roasted vegetables on a platter with the ranch dip in the center. Serve warm or at room temperature.

Notes

For best results, use full-fat Greek yogurt and mayonnaise. Do not overcrowd the baking sheet to ensure proper caramelization. The dip can be made up to 2 days ahead. Vegetables can be prepped a day in advance but roast fresh for best texture.
