Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Rinse the pumpkin seeds in a colander under cool water, using your fingers to separate them from the pulp. Don’t worry about removing every bit of pulp.
  3. Dry the seeds thoroughly by spreading them on a clean kitchen towel or paper towels and patting them dry. They should be damp but not wet.
  4. In a medium mixing bowl, combine the dried pumpkin seeds, olive oil, smoked paprika, cumin, garlic powder, salt, and cayenne (if using). Toss until every seed is evenly coated.
  5. Spread the seasoned seeds in a single, even layer on the prepared baking sheet. Make sure no seeds are overlapping.
  6. Bake for 12-15 minutes, stirring halfway through at the 7-minute mark. The seeds are done when golden brown and sizzling slightly.
  7. Remove from the oven and let the seeds cool completely on the baking sheet for at least 10 minutes. They will continue to crisp as they cool.
  8. Taste and adjust salt if needed. Serve at room temperature.
