These quick small-batch snickerdoodle cookies are proof that good things come from kitchen accidents. They’re fast, forgiving, and deliver classic cinnamon-sugar magic without any fuss.

  • 3 tablespoons unsalted butter, softened (42g)
  • ¼ cup granulated sugar (50g)
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ½ cup plus 1 tablespoon all-purpose flour (75g)
  • ½ teaspoon cream of tartar
  • ¼ teaspoon baking soda
  • ⅛ teaspoon salt
  • 2 tablespoons granulated sugar (for coating, 25g)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, beat the softened butter and ¼ cup of granulated sugar together until light and fluffy, about 2 minutes with a hand mixer or 3 minutes with a whisk.
  3. Mix in the egg yolk and vanilla extract until fully combined. Scrape down the sides of the bowl.
  4. In a small bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  5. Add the flour mixture to the butter mixture. Stir with a spatula until just combined. The dough will be soft and slightly sticky.
  6. In a small bowl, mix the 2 tablespoons of sugar and 1 teaspoon of cinnamon for the coating.
  7. Scoop the dough into 6 equal portions, about 1.5 tablespoons each. Roll each portion into a ball, then roll in the cinnamon sugar mixture to coat generously. Place on the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 9 to 11 minutes, until the edges are set and lightly golden but the centers still look soft and puffy.
  9. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack.

Notes

Don’t overbake; cookies will set as they cool. Use room temperature butter. Measure flour correctly by spooning and leveling. If dough is sticky, chill for 10 minutes. Roll dough balls generously in cinnamon sugar.
