A happy accident turned into a family favorite! This cheesy corn casserole combines Jiffy corn muffin mix, creamed corn, cheddar cheese, and mild green chiles for a creamy, golden-topped side dish that even picky eaters love. Ready in under an hour with simple pantry ingredients.

  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 can (14.75 oz) creamed corn
  • 1 cup (4 oz) shredded cheddar cheese
  • 1 can (4 oz) diced green chiles, drained
  • 1/3 cup (about 5 tablespoons) unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1/4 cup sour cream or Greek yogurt (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish with butter or non-stick spray.
  2. Drain the whole kernel corn and diced green chiles in a colander. Do not drain the creamed corn.
  3. Melt the butter in a small microwave-safe bowl in 20-second bursts. Let cool slightly.
  4. In a large mixing bowl, combine the beaten eggs, melted butter, drained whole kernel corn, creamed corn, drained green chiles, and optional sour cream or Greek yogurt. Stir until well combined.
  5. Add the entire box of Jiffy Corn Muffin Mix to the bowl. Stir gently until just combined—do not overmix. A few lumps are fine.
  6. Fold in 3/4 cup of the shredded cheddar cheese. Reserve the remaining 1/4 cup for topping.
  7. Pour the batter into the prepared baking dish and spread evenly. Sprinkle the reserved cheese on top.
  8. Bake on the middle rack for 35 to 40 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the casserole rest for 5 to 10 minutes before serving to allow it to set.

Don’t overmix the batter—a few lumps are fine. Let the casserole rest for 5-10 minutes before cutting to allow it to set. For a spicier version, add a finely chopped jalapeño or a pinch of cayenne. To make it a main dish, stir in 1 cup of cooked crumbled sausage or diced ham. This casserole doubles well—use a 9×13-inch dish and bake for 45-50 minutes.
