  • 2 cans (12.4 oz each) refrigerated cinnamon rolls (e.g., Pillsbury Grands!)
  • 4 large eggs, room temperature
  • 1/2 cup whole milk
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 oz cream cheese, softened
  • 2 tablespoons Greek yogurt
  • 1 tablespoon maple syrup
  • 1–2 tablespoons milk

Instructions

  1. Spray a 9×13-inch baking dish generously with non-stick cooking spray.
  2. Open both cans of cinnamon rolls and set the icing packets aside. Cut each cinnamon roll into quarters (about 32 pieces total).
  3. Scatter the cinnamon roll pieces evenly in the prepared baking dish.
  4. In a large mixing bowl, whisk together the eggs, milk, Greek yogurt, vanilla extract, cinnamon, and salt until smooth and pale yellow.
  5. Pour the custard evenly over the cinnamon roll pieces. Use a spatula to gently press down on the rolls so they absorb some of the liquid. Do not stir.
  6. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  7. The next morning, preheat the oven to 350°F (175°C). Remove the casserole from the fridge while the oven heats up (about 15 minutes).
  8. Bake uncovered for 28-32 minutes, until the top is golden brown and the center is set. A knife inserted in the center should come out clean.
  9. While the casserole bakes, make the drizzle: In a small bowl, combine the reserved icing packets, softened cream cheese, Greek yogurt, and maple syrup. Microwave for 15 seconds, then stir until smooth. Add milk one tablespoon at a time until pourable.
  10. Let the casserole rest for 5 minutes after baking. Drizzle the cream cheese mixture over the top and serve warm.

Notes

For best texture, let the casserole soak overnight. If edges brown too quickly, tent with foil for the last 10 minutes. Use room temperature ingredients for smooth blending. Leftovers keep in the refrigerator for up to 3 days; reheat in the oven at 300°F for 10 minutes.
