These Light Red Velvet Crinkle Cookies are soft, chewy, and dusted with snowy powdered sugar. Ready in under 20 minutes with no chilling required, they’re a healthier take on a classic indulgence.

  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter, softened
  • ⅓ cup granulated sugar
  • 2 tablespoons light cream cheese, softened
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon liquid red food coloring (or ½ teaspoon gel)
  • About ½ cup powdered sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt until evenly mixed.
  3. In a large mixing bowl, beat butter, granulated sugar, and cream cheese together until light and fluffy, about 2 minutes on medium speed.
  4. Beat in egg and vanilla extract until combined.
  5. Add food coloring and beat until the color is uniform.
  6. Add the flour mixture in two additions, mixing on low speed or folding with a spatula until just combined. Do not overmix.
  7. If desired, chill the dough for 15 minutes for easier handling.
  8. Pour powdered sugar into a shallow bowl.
  9. Scoop rounded tablespoons of dough (about 1.5 tablespoons each) and roll into balls. Roll each ball generously in powdered sugar to coat thickly.
  10. Place coated dough balls about 2 inches apart on the prepared baking sheet.
  11. Bake for 9-11 minutes, until edges are set and tops look cracked and slightly puffed. Centers should still look soft.
  12. Cool on the baking sheet for 3 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients. Roll dough balls generously in powdered sugar to achieve the crinkle effect. Do not overbake; cookies continue cooking on the hot sheet. Store in an airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 3 months.
