This kid-approved green bean casserole with crispy fried onions is the dish that makes picky eaters ask for seconds. It’s creamy, crunchy, and perfect for family dinners or holiday feasts.

  • 1 pound fresh green beans, trimmed and cut into 2-inch pieces
  • 1 (14.5-ounce) bag frozen green beans, thawed and drained
  • 1 (10.5-ounce) can cream of mushroom soup
  • ½ cup whole milk
  • 1 tablespoon soy sauce
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ⅛ teaspoon nutmeg (optional)
  • 1½ cups crispy fried onions, divided
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blanch fresh green beans: Bring a large pot of salted water to a boil. Add fresh green beans and cook for exactly 3 minutes. Drain and immediately run cold water over them to stop cooking.
  3. Mix sauce: In a large mixing bowl, combine cream of mushroom soup, milk, soy sauce, garlic powder, black pepper, and nutmeg. Stir until smooth.
  4. Add green beans: Add both blanched fresh green beans and thawed frozen green beans to the bowl. Stir gently until all beans are coated.
  5. Add half the onions: Fold in ¾ cup of crispy fried onions. If using cheese, add it now and stir gently.
  6. Transfer to baking dish: Pour mixture into a greased 9×13-inch baking dish. Spread evenly.
  7. Top with remaining onions: Sprinkle remaining ¾ cup of crispy fried onions evenly over the top. If adding extra cheese, sprinkle over onions.
  8. Bake for 25-30 minutes until bubbly around edges and top is golden brown.
  9. Let rest for 5 minutes before serving to allow sauce to set.

Notes

For best texture, use a mix of fresh and frozen green beans. Pat frozen beans dry to avoid watery casserole. Let casserole rest 5 minutes before serving. Can be assembled ahead without topping onions and refrigerated up to 24 hours. Add 5 minutes to baking time if starting cold.
