This creamy, comforting white chicken chili was born from a kitchen accident and has become a weeknight favorite. Made with simple ingredients like chicken, white beans, green chiles, and cream cheese, it’s a dump-and-go slow cooker meal that delivers rich flavor with minimal effort.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts (about 2–3 large)
  • 2 (15-ounce) cans white beans (cannellini, Great Northern, or navy), drained and rinsed
  • 2 (4-ounce) cans diced green chiles
  • 4 cups (32 ounces) low-sodium chicken broth
  • 8 ounces cream cheese, softened and cubed
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano (Mexican oregano preferred)
  • 1 teaspoon chili powder (mild)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional toppings: fresh cilantro, shredded Monterey Jack cheese, sliced jalapeños, diced avocado, sour cream, lime wedges, tortilla chips or strips

Instructions

  1. Prep the aromatics: Dice the onion and mince the garlic.
  2. Layer ingredients in the slow cooker: Place chicken breasts at the bottom. Add drained white beans, diced green chiles, diced onion, and minced garlic on top. Sprinkle cumin, oregano, chili powder, salt, and pepper over everything. Pour chicken broth around the edges, avoiding washing spices off the chicken.
  3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and shreds easily.
  4. Shred the chicken: Remove chicken to a cutting board or bowl. Shred with two forks (or use a hand mixer on low in the slow cooker for finer shreds). Return shredded chicken to the slow cooker.
  5. Add cream cheese: Cut cream cheese into cubes and add to the pot. Stir gently until completely melted and broth is smooth, about 3-5 minutes.
  6. Taste and adjust: Add more salt, pepper, or cumin if needed. Squeeze in fresh lime juice to brighten. If too thick, add a splash of broth; if too thin, cook uncovered for 10-15 minutes.
  7. Serve: Ladle into bowls and top with desired toppings like cilantro, cheese, avocado, sour cream, and tortilla chips.

Notes

For deeper flavor, sauté onions and garlic in oil before adding to slow cooker. Let cream cheese come to room temperature before adding to prevent clumping. Shred chicken while warm for easiest results. Chili thickens as it sits; adjust consistency with broth. Flavors improve overnight. For dairy-free, use full-fat coconut milk and cornstarch slurry. For vegetarian, use 3 cans beans and vegetable broth.
