  • ⅓ cup (75 grams) unsalted butter, melted
  • ¾ cup (150 grams) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190 grams) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (85 grams) chocolate chips (optional)
  • ½ cup (60 grams) chopped walnuts or pecans (optional)
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line your 9×5-inch loaf pan with parchment paper, leaving a little overhang on the long sides.
  2. In your large mixing bowl, mash the three ripe bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Pour the slightly cooled melted butter over the mashed bananas and stir until well combined.
  4. Add the granulated sugar, room-temperature egg, and vanilla extract. Stir until fully incorporated.
  5. Sprinkle the all-purpose flour, baking soda, and salt over the wet mixture. Stir gently just until the flour disappears. If adding chocolate chips or nuts, fold them in at this point.
  6. Let the batter rest in the bowl for 5 minutes.
  7. Pour the batter into the prepared pan and smooth the top gently.
  8. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top browns too quickly, tent with aluminum foil after about 40 minutes.
  9. Cool in the pan for 10 minutes, then use the parchment overhang to lift the bread out and transfer to a cooling rack to cool completely.
