Easy Homemade German Pretzel Bites with Beer Cheese Dip

  • 10 cups water
  • ⅔ cup baking soda
  • 1 large egg, beaten with 1 tablespoon water (egg wash)

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • ½ cup lager beer
  • 2 cups sharp cheddar cheese, freshly shredded
  • ½ teaspoon garlic powder
  • ½ teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Activate the Yeast: In your large mixing bowl, combine the warm water (110°F-115°F), brown sugar, and active dry yeast. Give it a gentle stir and let it sit for 5-10 minutes until it becomes frothy and bubbly.
  2. Make the Dough: Add the flour, salt, and 4 tablespoons of melted butter to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms.
  3. Knead the Dough: Knead for about 6-8 minutes (or 4-5 minutes in the mixer). The dough should become smooth, elastic, and slightly tacky but not sticky.
  4. First Rise: Place the dough in a lightly greased bowl, turning it to coat all sides. Cover the bowl with plastic wrap or a clean kitchen towel. Let it rise in a warm, draft-free place for about 1 hour, or until it has doubled in size.
  5. Prepare the Baking Soda Bath: While the dough rises, bring the 10 cups of water and ⅔ cup of baking soda to a boil in your large pot. Once it’s boiling, reduce the heat to a gentle simmer.
  6. Shape the Pretzel Bites: Preheat your oven to 425°F (220°C). Punch down the risen dough and turn it out onto a lightly floured surface. Divide the dough into 4 equal pieces. Roll each piece into a long rope, about 1-inch thick. Using a sharp knife or bench scraper, cut the rope into 1-inch pieces.
  7. The Bath: Working in batches of 8-10, gently drop the pretzel bites into the simmering baking soda water. Let them boil for 30 seconds. They will float to the top. Use your slotted spoon to flip them over halfway through. Remove them with the slotted spoon, letting the excess water drip off, and place them on your parchment-lined baking sheet.
  8. Egg Wash and Salt: In a small bowl, whisk the egg with 1 tablespoon of water. Brush this egg wash over each pretzel bite. Sprinkle generously with coarse sea salt.
  9. Bake: Bake the pretzel bites for 12-15 minutes, or until they are a deep, gorgeous golden brown. Rotate the baking sheet halfway through for even browning.
  10. Make the Beer Cheese Dip: In a small saucepan over medium heat, melt the 2 tablespoons of butter. Whisk in the 2 tablespoons of flour and cook for 1 minute, stirring constantly. Slowly whisk in the milk and the beer. Continue whisking until the mixture thickens, about 3-4 minutes.
  11. Melt the Cheese: Reduce the heat to low. Add the shredded cheddar cheese, a handful at a time, whisking until completely melted and smooth before adding the next batch. Stir in the garlic powder, Dijon mustard, salt, and pepper. Keep the dip warm on the lowest setting.
  12. Serve: Remove the pretzel bites from the oven. Let them cool on the baking sheet for 2 minutes, then transfer them to a warm serving platter. Pour the warm beer cheese dip into a small bowl and set it in the center. Serve immediately.
