A quick and delicious salad featuring crisp apples, toasted pecans, dried cranberries, and feta cheese, all tossed in a tangy maple vinaigrette. Perfect for weeknights or potlucks.

  • 5 oz (about 5 cups) mixed salad greens
  • 1 large apple (Honeycrisp or Fuji), thinly sliced
  • 1/2 cup pecans, roughly chopped
  • 1/3 cup dried cranberries
  • 1/3 cup crumbled feta cheese
  • 1/4 small red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Toast the pecans: Place chopped pecans in a small skillet over medium heat. Cook, stirring frequently, for 2 to 3 minutes until fragrant and lightly browned. Transfer to a plate to cool.
  2. Make the dressing: In a small bowl or mason jar, combine olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper. Whisk vigorously or shake until emulsified and smooth. Taste and adjust seasoning if needed.
  3. Prep the apple and onion: Core the apple and slice thinly. Thinly slice the red onion. If sensitive to raw onion, soak slices in cold water for 5 minutes, then drain and pat dry.
  4. Assemble the salad: Place mixed greens in a large salad bowl. Add sliced apple, red onion, dried cranberries, cooled toasted pecans, and crumbled feta.
  5. Dress and toss: Drizzle about two-thirds of the dressing over the salad. Toss gently until everything is evenly coated. Add more dressing if desired.
  6. Serve immediately: Enjoy while apples are crisp and greens are fresh.

Notes

For best results, toast pecans just before using and slice apples right before serving. Keep dressing separate if making ahead. To prevent apple browning, toss slices with a little lemon juice. If apples are very tart, add extra maple syrup to dressing.
