Ingredients

Scale
  • 10–12 fresh rosemary sprigs
  • 8 ounces sharp cheddar cheese, cut into 1-inch cubes
  • 1 small wheel (about 8 ounces) brie cheese
  • 4 ounces goat cheese log, sliced into rounds
  • 4 ounces prosciutto, thinly sliced
  • 4 ounces Genoa salami, sliced
  • 3 ounces pepperoni, sliced (optional)
  • 1 cup red grapes, washed and separated into small clusters
  • 1/2 cup green grapes, washed
  • 1/2 cup dried cranberries
  • 1/4 cup fresh cranberries (for garnish)
  • 2 cups assorted crackers
  • 1 small baguette, sliced into 1/2-inch rounds and lightly toasted
  • 1/2 cup mixed olives (green and kalamata), drained
  • 1/4 cup roasted red peppers, sliced into strips
  • 1 small jar honey or fig jam
  • Fresh thyme or sage sprigs (for garnish)

Instructions

  1. Prepare Your Board (2 minutes): Place your large board on a clean, flat surface. Arrange the fresh rosemary sprigs in a large circle on the outer edge of the board, overlapping them slightly to create a full, lush ring.
  2. Arrange the Cheeses (4 minutes): Place the brie wheel in the center of the board. Arrange the cheddar cheese cubes in small clusters around the wreath, nestling them among the rosemary. Place the goat cheese rounds in a few spots around the ring, spacing them out evenly.
  3. Add the Meats (3 minutes): Fold each prosciutto slice into a loose ribbon by rolling it lengthwise and then twisting it slightly. Place these ribbons around the wreath, tucking them near the cheese. Fold the salami slices in half and then in half again, creating small triangles. Place these around the board. Add the pepperoni slices in a few spots for a pop of red.
  4. Place the Fruits (3 minutes): Tuck small clusters of red and green grapes around the wreath, spacing them out like ornaments on a tree. Sprinkle the dried cranberries evenly around the board, letting them fall into the gaps. Scatter a few fresh cranberries for a bright, festive look.
  5. Fill in with Crackers and Bread (3 minutes): Arrange the assorted crackers and baguette slices around the wreath, filling in any empty spaces. Place them in small piles or fan them out for a pretty presentation. Make sure some crackers are near each cheese type.
  6. Add the Extras and Garnishes (2 minutes): Place the small bowls of olives and roasted red peppers in the center of the board, near the brie. Drizzle a little honey over the brie or place a small jar of fig jam nearby. Tuck a few extra sprigs of fresh thyme or sage around the board for a final touch of green.
  7. Final Check and Serve (1 minute): Step back and look at your board. Fill in any bare spots with extra crackers or grapes. Make sure the colors are balanced. Serve immediately, or cover with plastic wrap and refrigerate for up to 2 hours. Take it out 15 minutes before serving to let the cheeses come to room temperature.

Notes

If the rosemary starts to look sad, spritz it with a tiny bit of water. Don’t stress if the grapes roll off the board—just put them back. It is supposed to look rustic and abundant, not perfect. For best flavor, take cheeses out of the fridge 30 minutes before assembling. Keep wet ingredients (olives, jam, honey) in separate bowls to prevent soggy crackers.
