Easy Fall Sparkling Apple Cider Mimosa Bar

A self-serve mimosa bar featuring sparkling apple cider, prosecco, and autumn-inspired garnishes. Guests build their own festive fall drinks in minutes.

Ingredients

  • 1 bottle (750 ml) sparkling apple cider, chilled
  • 1–2 bottles (750 ml each) prosecco or champagne, chilled
  • 1 cup fresh apple cider (optional)
  • 1/4 cup maple syrup
  • 1/2 cup pomegranate juice
  • Optional: ginger simple syrup (1/2 cup water, 1/2 cup sugar, 3-4 slices fresh ginger)
  • 2–3 apples (mix of green and red), thinly sliced
  • 1 cup fresh pomegranate seeds
  • 8–10 cinnamon sticks
  • 6–8 fresh rosemary sprigs
  • 1–2 oranges, thinly sliced into rounds
  • 1/2 cup fresh or frozen cranberries
  • A few whole star anise
  • Optional: vanilla extract, apple brandy or bourbon, honey, chai tea concentrate

Instructions

  1. Chill prosecco, sparkling apple cider, and any juices in the refrigerator for at least 4 hours or overnight.
  2. Slice apples thinly into rounds or half-moons and toss with a squeeze of lemon juice to prevent browning. Slice oranges into thin rounds. Rinse and dry pomegranate seeds and cranberries. Rinse rosemary sprigs. Arrange all garnishes in separate small bowls.
  3. Set up a bar station on a flat surface. Arrange glasses at one end, then bubbly options (prosecco and sparkling cider), then juice and syrup add-ins, and finally garnish bowls at the far end to create a natural flow.
  4. Fill an ice bucket or large bowl halfway with ice. Nestle prosecco and sparkling cider bottles in the ice, adding more ice around them. Top with a little cold water.
  5. Add labels if desired (e.g., ‘Prosecco’, ‘Sparkling Cider’, ‘Pomegranate Juice’, ‘Maple Syrup’, ‘Fresh Apple Cider’).
  6. Place small tongs or cocktail picks next to each garnish bowl. Put a small ladle or measuring cup in juice and syrup containers.
  7. Optional: Make ginger simple syrup by combining 1/2 cup water, 1/2 cup sugar, and 3-4 slices fresh ginger in a small saucepan. Bring to a simmer, stirring until sugar dissolves. Simmer 5 minutes, then remove from heat and cool. Strain out ginger and pour syrup into a small jar.
  8. Before guests arrive, make a test glass to check balance and flow.

Notes

For best results, use dry brut prosecco to balance the sweetness of the cider. Slice apples just before serving to prevent browning. Offer a ‘build your own’ guide with suggested combinations for shy guests. Pour syrups and juices into the glass first, then add bubbles to avoid a fizzy mess. Keep extra bottles chilled in the fridge.
