Tender, fall-apart pork chops in a rich, savory gravy made effortlessly in the slow cooker. This foolproof recipe turns a simple weeknight dinner into pure comfort food.

  • 4 bone-in pork chops, about 1-inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 packet (1 oz) dry onion soup mix
  • 1 cup low-sodium chicken broth
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 cup sliced mushrooms (optional)
  • 1/2 cup diced onion (optional)
  • 2 cloves garlic, minced (optional)

Instructions

  1. Season the pork chops. Pat them dry with paper towels. Mix the salt, pepper, garlic powder, and onion powder in a small bowl, then rub it all over both sides of the chops. Let them sit at room temperature for about 15 minutes.
  2. Sear the chops. Heat the olive oil in a large skillet over medium-high heat until shimmering. Place the pork chops in the pan and cook for 3-4 minutes per side, until golden brown. Work in batches if needed.
  3. Build the gravy base. In your slow cooker, whisk together the cream of mushroom soup, dry onion soup mix, chicken broth, Worcestershire sauce, and dried thyme. If using mushrooms, onions, or garlic, add them now.
  4. Add the pork chops. Nestle the seared chops into the gravy mixture, making sure they are mostly covered. Spoon a little gravy over the tops if needed.
  5. Cook low and slow. Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the meat is fork-tender.
  6. Thicken the gravy. About 20 minutes before serving, whisk together the cornstarch and cold water in a small bowl until smooth. Remove the pork chops from the slow cooker and set aside. Whisk the cornstarch slurry into the gravy, then replace the lid and cook on HIGH for 15-20 minutes, until thickened.
  7. Serve and enjoy. Return the pork chops to the gravy, spoon some over the top, and serve immediately over mashed potatoes or egg noodles.

Notes

Don’t skip the sear—it adds deep flavor to the gravy. Use bone-in chops for juicier results. Thicken the gravy at the end to avoid a thin sauce. Leftovers taste even better the next day.
