Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs
  • 1 (16-ounce) jar salsa verde (preferably Herdez or Frontera)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon salt (plus more to taste)
  • ¼ teaspoon black pepper
  • 1 (4-ounce) can diced green chiles (mild or hot)
  • Juice of 1 lime (about 2 tablespoons)
  • Fresh cilantro, chopped (for serving)
  • Warm corn or flour tortillas (for serving)
  • Sour cream or Greek yogurt (for serving)
  • Diced avocado (for serving)
  • Shredded Monterey Jack or queso fresco (for serving)
  • Lime wedges (for serving)

Instructions

  1. Prep your ingredients: Dice the onion and mince the garlic. Open the jar of salsa verde and the can of diced green chiles. Measure out your spices.
  2. Layer the crockpot: Place the chicken thighs in the bottom of the slow cooker in a single layer if possible. Sprinkle the diced onion and minced garlic evenly over the chicken.
  3. Add the liquids and spices: Pour the salsa verde over everything, making sure it covers most of the chicken. Add the diced green chiles, cumin, oregano, salt, and pepper. Give it a gentle stir to combine.
  4. Cook low and slow: Cover and cook on low for 4-5 hours or on high for 2-3 hours. Resist the urge to lift the lid.
  5. Shred the chicken: Once the chicken is cooked through and easily falls apart with a fork (internal temperature of 165°F), use tongs to transfer it to a cutting board. Shred it with two forks or your fingers. Return the shredded chicken to the crockpot and stir it into the sauce.
  6. Finish with lime juice: Squeeze the lime juice over the chili verde and stir. Taste and adjust salt or spices if needed.
  7. Serve and enjoy: Ladle into bowls and top with your favorite garnishes. Serve with warm tortillas on the side.

Notes

For best flavor, use chicken thighs instead of breasts. Sear chicken thighs in a hot skillet with oil for 2-3 minutes per side before adding to the crockpot for deeper flavor. Prep ingredients the night before for easy morning assembly. If chili verde tastes flat, add more salt or lime juice. Leftovers taste even better the next day.
