  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 3 pounds Yukon Gold potatoes, peeled and diced into ½-inch cubes
  • 1 cup heavy cream
  • ½ cup whole milk
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon black pepper (freshly ground)
  • ¼ teaspoon smoked paprika (optional)
  • ¼ cup fresh chives, chopped (for garnish)
  • ½ cup shredded sharp cheddar cheese (optional, for topping)

Instructions

  1. Cook the bacon. Place the bacon strips in your cold Dutch oven. Turn the heat to medium and cook for 6-8 minutes, flipping once, until crispy. Transfer the bacon to a paper towel-lined plate. When cool enough to handle, crumble or chop into small pieces. Leave about 2 tablespoons of bacon fat in the pot.
  2. Sauté the aromatics. Add the butter to the pot with the bacon fat. Once melted, add the diced onion. Cook for 4-5 minutes, stirring occasionally, until the onion is soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the potatoes and broth. Pour in the chicken broth and scrape up any browned bits from the bottom of the pot. Add the diced potatoes, salt, pepper, and smoked paprika if using. Stir everything together.
  4. Simmer the soup. Bring the pot to a boil, then reduce the heat to medium-low. Cover and let it simmer for 15-18 minutes, or until the potatoes are fork-tender.
  5. Blend half the soup. Using an immersion blender, blend about half of the soup right in the pot until partially smooth but still chunky. If using a regular blender, carefully transfer about 3 cups of soup, blend until smooth, then pour back into the pot.
  6. Add the cream and milk. Stir in the heavy cream and whole milk. Let the soup simmer for another 3-4 minutes, stirring occasionally. Do not let it boil after adding the cream.
  7. Adjust the seasoning. Taste the soup and add more salt and pepper if needed.
  8. Serve it up. Ladle the soup into bowls. Top each bowl with crispy bacon bits, fresh chives, and shredded cheddar if desired. Serve immediately.

Notes

For best texture, do not over-blend; leave some potato chunks. If soup is too thick, add a splash more milk or broth. If too thin, simmer uncovered for a few minutes. For a vegetarian version, skip bacon and use vegetable broth with 1 teaspoon liquid smoke. For dairy-free, use full-fat coconut milk and unsweetened oat milk.
