Ingredients

Scale
  • 1 (2-3 lb) boneless, skin-on turkey breast
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • 1 cup fresh or frozen cranberries
  • ½ cup orange juice, freshly squeezed
  • ¼ cup packed brown sugar
  • 2 tablespoons honey
  • 2 tablespoons unsalted butter
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • ½ cup low-sodium chicken broth
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat oven to 375°F (190°C). Let turkey breast sit at room temperature for 15 minutes.
  2. In a small saucepan, combine cranberries, orange juice, brown sugar, honey, and butter. Cook over medium heat, stirring occasionally, until cranberries pop and mixture thickens slightly (5-7 minutes). Stir in orange zest and vanilla extract. Remove from heat and set aside.
  3. Pat turkey breast dry with paper towels. Rub olive oil all over. Mix salt, pepper, garlic powder, and dried thyme; sprinkle evenly over turkey.
  4. Place turkey skin-side up in a baking dish. Pour half of the glaze over the top, spreading to coat. Scatter remaining cranberries around turkey. Roast for 45-60 minutes, until internal temperature reaches 155°F (68°C) in the thickest part.
  5. After 30 minutes of roasting, baste turkey with remaining glaze. If skin browns too quickly, tent with foil for last 15 minutes.
  6. Remove turkey from oven when it reaches 160°F (71°C). Transfer to a cutting board, tent with foil, and rest for 10-15 minutes (temperature will rise to 165°F/74°C).
  7. While turkey rests, place baking dish on stovetop over medium heat. Add chicken broth and scrape up browned bits. Whisk in flour and cook 1-2 minutes until sauce thickens. Strain if desired. Season with salt and pepper.
  8. Slice turkey against the grain into ½-inch thick slices. Arrange on platter, drizzle with pan sauce, and spoon roasted cranberries over top. Serve immediately.

Notes

Don’t skip the resting time; it ensures juicy meat. Use a meat thermometer for perfect doneness. Pat the skin dry for crispy skin. If glaze burns, add a splash of chicken broth or water to the pan.
