These cranberry brie bites are the perfect holiday appetizer, combining flaky puff pastry with creamy brie and tangy cranberry sauce. Ready in under 30 minutes, they look like you spent hours on them and are always a crowd-pleaser.

  • 1 sheet frozen puff pastry, thawed (preferably Pepperidge Farm)
  • 4 ounces brie cheese, rind removed and cut into 24 small cubes (about 1/2-inch each)
  • 1/3 cup whole berry cranberry sauce (homemade or high-quality store brand)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • 2 tablespoons fresh rosemary, finely chopped (optional)
  • 1 tablespoon honey (for drizzling)
  • Flaky sea salt, for finishing (e.g., Maldon)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Lightly spray a 24-cup mini muffin tin with non-stick cooking spray.
  2. On a lightly floured surface, gently roll out the thawed puff pastry sheet to a 12×12-inch square. Cut the square into 24 equal pieces, about 2 inches each.
  3. Gently press each square into a cup of the mini muffin tin, letting the corners stick up slightly. Do not stretch the pastry.
  4. Place one cube of brie into each pastry cup, ensuring it sits in the center.
  5. Spoon about 1/2 teaspoon of cranberry sauce over each brie cube. Do not overfill.
  6. Using a pastry brush, gently coat the exposed edges of the puff pastry with the egg wash. Avoid letting it drip into the cups.
  7. Place the muffin tin on a baking sheet and bake for 12-15 minutes, until the pastry is puffed and golden brown and the brie is bubbly.
  8. Cool in the tin for 5 minutes. Then use a small offset spatula or butter knife to gently lift them out.
  9. Transfer to a serving platter. Drizzle with honey and sprinkle with fresh rosemary and a pinch of flaky sea salt. Serve warm.

Notes

Keep the puff pastry cold for best flakiness. Do not overfill the cups with cranberry sauce to avoid sogginess. These are best served within 15 minutes of baking. For make-ahead, assemble up to 4 hours ahead and refrigerate, brushing with egg wash just before baking. To freeze, assemble unbaked bites, freeze solid, then transfer to a freezer bag; bake from frozen, adding 3-5 minutes.
