  • 4 large eggs, room temperature
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • Icing packets from cinnamon rolls
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Open the cinnamon rolls and cut each one into quarters using a sharp knife or kitchen shears.
  3. Arrange the cinnamon roll pieces evenly in the prepared baking dish. Set aside the icing packets.
  4. In a large mixing bowl, whisk together the eggs, heavy cream, whole milk, vanilla extract, ground cinnamon, and salt until smooth and pale yellow, about 30 seconds.
  5. Pour the custard evenly over the cinnamon roll pieces, gently pressing down any pieces sticking up above the liquid.
  6. In a small bowl, mix the melted butter, brown sugar, and ground cinnamon into a thick paste. Spoon dollops over the top of the casserole.
  7. Let the casserole rest on the counter for 10 minutes to allow the rolls to absorb the custard.
  8. Bake for 25-30 minutes, until the top is golden brown and the center is set. If browning too quickly, tent with aluminum foil for the last 5-10 minutes.
  9. While the casserole bakes, make the glaze: squeeze the icing packets into a small bowl, add softened cream cheese and milk, and stir until smooth.
  10. Remove the casserole from the oven and let it cool on a wire rack for 5 minutes. Drizzle the glaze over the top and serve warm.

For a make-ahead option, assemble the casserole through step 7, cover tightly with plastic wrap, and refrigerate overnight. Let sit at room temperature for 20 minutes before baking, adding 5 extra minutes to the baking time. For best results, use room temperature eggs and don’t let the casserole rest more than 20 minutes before baking to avoid mushy rolls.
