This Easy Apple Cider Mimosa with Cinnamon Sugar Rim is a quick, 5-minute cocktail that combines tart apple cider, dry sparkling wine, and a warm cinnamon-sugar rim. It’s the perfect fall brunch drink that impresses guests with minimal effort.

Ingredients

  • 1 cup (240 ml) apple cider, chilled
  • 2 cups (480 ml) Prosecco or Champagne, chilled
  • Ice (optional)
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon (2.5 g) ground cinnamon
  • 1 tablespoon (15 ml) honey or maple syrup
  • Apple slices (optional, for garnish)
  • Cinnamon sticks (optional, for garnish)
  • Star anise (optional, for garnish)

Instructions

  1. In a small bowl, combine 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon. Whisk together with a fork until evenly distributed.
  2. Pour 1 tablespoon of honey or maple syrup onto a small, flat plate. Spread it into a thin, even layer about the same diameter as your glass rim.
  3. Dip the rim of a chilled champagne flute into the honey or maple syrup, rotating gently to coat the entire rim. Let any excess drip off.
  4. Dip the rim into the cinnamon sugar mixture, rotating to coat evenly. Lift the glass and tap gently to shake off loose sugar. Repeat for all glasses.
  5. Optionally, add 2-3 ice cubes to each prepared glass.
  6. Pour ¼ cup (60 ml) of chilled apple cider into each glass.
  7. Slowly pour ½ cup (120 ml) of chilled prosecco or champagne into each glass, pouring at an angle down the side to preserve bubbles. Fill almost to the top, leaving about half an inch of space.
  8. Garnish with a thin apple slice, cinnamon stick, or star anise if desired. Serve immediately.

Notes

Chill all ingredients and glasses for best results. Do not stir the drink to preserve bubbles. For a party, set up a mimosa bar so guests can rim their own glasses and build their own drinks. Use frozen apple cider cubes instead of ice to avoid dilution.
