These creamy overnight peanut butter protein oats are the perfect easy fall breakfast. With just 5 minutes of prep, you get a protein-packed, pudding-like breakfast that tastes indulgent but is actually good for you.

Ingredients

  • 1 cup (90g) old-fashioned rolled oats
  • 1 cup (240ml) milk (any kind)
  • 1/2 cup (120g) plain Greek yogurt
  • 3 tablespoons (48g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder (optional)
  • 1 tablespoon (15g) chia seeds
  • 1–2 tablespoons (15-30ml) maple syrup or honey
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of sea salt
  • Optional toppings: chopped peanuts, sliced banana, diced apple, extra peanut butter, cinnamon, dark chocolate chips

Instructions

  1. Combine the dry ingredients: In a jar or container, add rolled oats, chia seeds, protein powder, and a pinch of salt. Stir to distribute evenly.
  2. Add the wet ingredients: Pour in milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract.
  3. Stir thoroughly for at least 30 seconds until the peanut butter is fully incorporated and the chia seeds are dispersed.
  4. Taste and adjust sweetness, peanut butter flavor, or salt as desired.
  5. Seal the container and refrigerate for at least 6 hours, preferably overnight (8 hours is ideal).
  6. In the morning, stir well. If too thick, add a splash of milk. Add toppings and enjoy cold or warm (microwave 30-45 seconds).

Notes

For best texture, use rolled oats (not quick or steel-cut). Chia seeds are essential for the pudding-like consistency. Protein powder can be omitted; add an extra tablespoon of chia seeds and a splash of vanilla extract instead. Warm peanut butter for easier mixing. These keep in the fridge for up to 5 days and can be frozen for up to 3 months.
