  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained (fire-roasted preferred)
  • 1 can (8 ounces) tomato sauce
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 2 cups beef broth (low-sodium preferred)
  • 1 packet (1 ounce) taco seasoning or 3 tablespoons homemade
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, sliced jalapeños, lime wedges

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned all over, about 6-8 minutes. Drain off excess fat.
  2. Add the diced onion to the skillet with the beef and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Transfer the beef mixture to a 6-quart or larger slow cooker.
  4. Add the diced tomatoes (with juices), tomato sauce, drained black beans, drained kidney beans, and drained corn. Stir to combine.
  5. Pour in the beef broth. Sprinkle the taco seasoning, chili powder, and cumin over the top. Stir until the spices are evenly distributed.
  6. Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. About 30 minutes before serving, taste and adjust salt, pepper, or heat level as needed.
  8. Ladle the soup into bowls and serve with desired toppings.

Notes

For a thicker soup, mash some of the beans against the side of the slow cooker with a fork before serving. This soup freezes well for up to 3 months. If using homemade taco seasoning, combine 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon dried oregano, 1/4 teaspoon cayenne pepper (optional), 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
