  • 1 pound breakfast sausage
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 10 large eggs
  • 1 cup whole milk
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional)
  • 2 cups shredded sharp cheddar cheese, divided
  • Fresh chives or parsley, for garnish (optional)

Instructions

  1. Brown the Sausage and Veggies: Heat a large skillet over medium-high heat. Add the breakfast sausage, breaking it up as it cooks. After about 4 minutes, add the diced onion and red bell pepper. Cook for another 5-6 minutes until the sausage is fully browned and the veggies are softened. Drain off any excess grease. Set aside to cool slightly.
  2. Whisk the Egg Mixture: In a large mixing bowl, crack the 10 eggs. Add the milk, salt, pepper, garlic powder, and smoked paprika. Whisk vigorously until the eggs are completely broken up and the mixture is a uniform, pale yellow color.
  3. Layer the Casserole: Lightly grease your slow cooker insert or line it with a slow cooker liner. Spread half of the frozen hash browns in an even layer on the bottom. Top with half of the sausage and veggie mixture. Sprinkle with 1 cup of the shredded cheddar cheese. Repeat the layers: the remaining hash browns, the remaining sausage mix, and the final cup of cheese.
  4. Pour the Custard: Slowly and evenly pour the whisked egg mixture over the entire layered casserole. Gently press down on the top with a spatula to help it soak in.
  5. Slow Cook to Perfection: Cover the slow cooker with the lid. Cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The casserole is done when the edges are golden brown, the center is set (it won’t jiggle), and a knife inserted into the center comes out clean. The internal temperature should be at least 160°F (71°C).
  6. Rest and Serve: Once cooked, turn off the slow cooker and let the casserole rest, uncovered, for about 10 minutes. Garnish with fresh chives or parsley before serving.

For best texture, cook on LOW. Thaw hash browns slightly to avoid watery casserole. Do not over-whisk eggs. Let casserole rest 10 minutes before serving. Can be assembled the night before and refrigerated; add 15 minutes to cooking time if starting cold.
