  • 4 soft caramel candies, chopped (about 40g)
  • 1/3 cup old-fashioned rolled oats (30g)
  • 1/3 cup all-purpose flour (40g)
  • 1/4 cup brown sugar (50g)
  • 1/4 cup unsalted butter, cold and cubed (57g)
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Flaky sea salt (for topping)
  • Vanilla ice cream or whipped cream (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Place a baking sheet on the middle rack.
  2. Peel and slice apples into 1/4-inch thick slices (about 2 cups total).
  3. In a medium bowl, toss apple slices with 2 tablespoons brown sugar, 1 tablespoon flour, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1 tablespoon lemon juice. Let sit while making topping.
  4. Chop 4 soft caramel candies into small pieces (about 1/4-inch each).
  5. In a small bowl, combine 1/3 cup oats, 1/3 cup flour, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, and a pinch of salt. Cut in cold cubed butter using a pastry cutter or fingertips until crumbly with pea-sized butter pieces.
  6. Divide apple mixture between two 8-ounce ramekins or a small baking dish. Tuck chopped caramel pieces into the apples. Sprinkle oat topping evenly over apples.
  7. Sprinkle a small pinch of flaky sea salt over the top of each ramekin.
  8. Bake for 25-30 minutes until topping is golden brown and filling is bubbling. If topping browns too fast, tent with foil for last 5 minutes.
  9. Cool for 5 minutes before serving.
  10. Serve warm with a scoop of vanilla ice cream or whipped cream.

Notes

For best texture, use a mix of sweet and tart apples like Honeycrisp and Granny Smith. Keep butter cold for a crumbly topping. Let caramel candies melt naturally—don’t stir too deep. Can be assembled up to 24 hours ahead (add salt just before baking).
