These creamy overnight oats with chia seeds and almond butter are a comforting, no-cook breakfast that tastes like a warm hug. Perfect for busy mornings, this recipe is ready in 5 minutes and can be customized with your favorite toppings.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 2 tablespoons (20g) chia seeds
  • 3 tablespoons (48g) almond butter
  • 1 cup (240ml) milk (any kind)
  • 1–2 tablespoons (15-30ml) maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • ½ teaspoon (1g) ground cinnamon
  • A pinch of salt
  • Optional toppings: sliced banana, fresh berries, chopped nuts, extra almond butter, coconut flakes

Instructions

  1. Mix the Wet Ingredients: In a small bowl or liquid measuring cup, combine 1 cup of milk, 3 tablespoons of almond butter, 1-2 tablespoons of maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Whisk until the almond butter is fully incorporated and the mixture is smooth.
  2. Combine the Dry Ingredients: In a medium bowl or directly in your jar, mix together 1 cup of rolled oats, 2 tablespoons of chia seeds, and ½ teaspoon of cinnamon. Stir with a fork to distribute everything evenly.
  3. Pour and Stir: Pour the wet mixture over the dry ingredients. Stir well until everything is combined, making sure there are no dry pockets of oats or chia seeds.
  4. Divide into Jars: Pour the mixture evenly into two 16-ounce mason jars or airtight containers, leaving about an inch of space at the top for the oats to expand.
  5. Refrigerate Overnight: Place the jars in the refrigerator for at least 6 hours, but overnight is best (8-12 hours).
  6. Stir and Serve: In the morning, take the jars out of the fridge and give them a good stir. If too thick, stir in a splash of milk to loosen it up.
  7. Add Toppings: Top with sliced banana, fresh berries, a drizzle of almond butter, a sprinkle of cinnamon, or some chopped nuts.

Notes

For best results, stir the almond butter into the milk first to avoid clumps. The oats taste even better on the second or third day as flavors meld. If you prefer warm oats, microwave for 30-45 seconds. For a nut-free version, use sunflower seed butter or tahini.
