Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large microwave-safe bowl, melt 1/2 cup unsalted butter in 20-second intervals until just melted. Let cool for 2-3 minutes.
  3. Add 3/4 cup granulated sugar and 1/4 cup packed light brown sugar to the melted butter. Whisk until smooth and glossy, about 30 seconds.
  4. Add 1 large egg (room temperature), 1/2 cup pumpkin puree, and 1 teaspoon vanilla extract. Whisk vigorously until fully incorporated.
  5. In a separate small bowl, whisk together 1 3/4 cups all-purpose flour, 1 teaspoon cream of tartar, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 1/2 teaspoons ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground ginger, and 1/4 teaspoon ground cloves.
  6. Gradually add dry ingredients to wet mixture, stirring with a wooden spoon or silicone spatula until just combined. Do not overmix.
  7. Cover bowl with plastic wrap and refrigerate dough for 15-20 minutes (optional but recommended for best texture).
  8. In a small shallow bowl, mix together 1/4 cup granulated sugar and 1 tablespoon ground cinnamon for the coating.
