This cozy one-bowl banana bread is the perfect comfort food—simple, forgiving, and incredibly moist. Made with very ripe bananas and melted butter, it comes together in one bowl with no mixer needed, delivering a tender, nutty crumb every time.

  • 3 very ripe bananas (medium-sized, about 1 cup mashed)
  • 1/3 cup melted butter (75g), unsalted
  • 3/4 cup granulated sugar (150g)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (190g)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional mix-ins: 1/2 cup chopped walnuts or pecans, 1/2 cup chocolate chips, or 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line your loaf pan with parchment paper, leaving some overhang on the long sides. If you don’t have parchment, grease the pan well with butter or non-stick spray.
  2. Mash the bananas. Peel the bananas and place them in your large mixing bowl. Mash them with a fork or potato masher until they’re mostly smooth with a few small lumps.
  3. Add the melted butter. Pour the slightly cooled melted butter over the mashed bananas. Stir until combined.
  4. Mix in the sugar, egg, and vanilla. Add the sugar and stir well. Then crack in the egg and add the vanilla extract. Mix until everything is smooth and glossy.
  5. Add the dry ingredients. Sprinkle the flour, baking soda, and salt over the wet mixture. Use a spatula to fold everything together gently. Stir just until no streaks of flour remain. A few lumps are fine.
  6. Fold in any mix-ins. If you’re using nuts, chocolate chips, or dried fruit, gently fold them in now. Distribute them evenly without overmixing.
  7. Pour the batter into the prepared pan. Use your spatula to scrape every last bit. Smooth the top gently. Tap the pan on the counter a couple of times to release any air bubbles.
  8. Bake for 55-65 minutes. Place the pan in the preheated oven. Bake until a toothpick inserted in the center comes out clean or with just a few moist crumbs. The top should be golden brown and cracked. If the top is browning too quickly after 40 minutes, tent it loosely with foil.
  9. Cool in the pan for 10 minutes. Then use the parchment overhang to lift the bread onto a cooling rack. Let it cool completely before slicing.

Use very ripe bananas for best sweetness and moisture. Don’t overmix the batter to avoid tough bread. Measure flour correctly by spooning into the cup and leveling off. Room temperature ingredients help create a smooth batter. Let the bread cool before slicing for best texture. The flavors deepen after the first day.
