  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (120ml) heavy cream, room temperature
  • 2 tablespoons white miso paste
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon flaky sea salt
  • 6 medium apples (about 2.5 lbs or 1.1 kg), a mix of Honeycrisp and Granny Smith
  • 2 tablespoons (30ml) fresh lemon juice
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons (16g) all-purpose flour
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (50g) old-fashioned rolled oats
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 cup (115g) cold unsalted butter, cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup (30g) chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Butter a 9×13-inch baking dish lightly.
  2. Make the miso caramel: In a medium saucepan over medium heat, melt the butter. Add the brown sugar and whisk until combined. Cook for 2-3 minutes until bubbling and smooth. Slowly pour in the heavy cream while whisking constantly. Reduce heat to low and whisk in the miso paste until dissolved. Remove from heat and stir in vanilla and flaky sea salt. Set aside to cool slightly.
  3. Prepare the apples: Peel, core, and slice the apples into 1/4-inch thick slices. Place in a large bowl and toss with lemon juice. Add granulated sugar, cinnamon, nutmeg, and flour. Toss until coated. Let sit for 5 minutes.
  4. Make the crumble topping: In a medium bowl, whisk together flour, oats, brown sugar, cinnamon, and salt. Add cold butter cubes and work into the dry ingredients until mixture resembles coarse meal with some pea-sized butter pieces. Stir in nuts if using. Refrigerate while assembling.
  5. Assemble the crumble: Spread apple mixture evenly in the prepared dish. Pour about 2/3 of the miso caramel over the apples and gently toss. Sprinkle crumble topping evenly over the apples.
  6. Bake: Place dish on a baking sheet. Bake for 35-40 minutes, until crumble is golden brown and filling is bubbling. If browning too quickly, tent with foil after 25 minutes.
  7. Finish and serve: Let cool on a wire rack for at least 15 minutes. Warm reserved miso caramel and drizzle over top. Sprinkle with extra flaky sea salt. Serve warm with vanilla ice cream or whipped cream.

Notes

For the crispiest topping, chill the assembled crumble in the fridge for 15 minutes before baking. The miso caramel is the star—let it cool slightly before adding miso to prevent clumping. This crumble tastes even better the next day.
