Ingredients

Scale
  • 1 pound (450g) pizza dough, store-bought or homemade
  • 1/2 cup (120ml) pizza sauce
  • 1 1/2 cups (170g) shredded low-moisture part-skim mozzarella cheese
  • 24 slices (about 3 ounces / 85g) pepperoni
  • 1/4 cup (30g) sliced black olives
  • 2 tablespoons (28g) unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • Pinch of salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Let pizza dough sit at room temperature for about 10 minutes.
  2. On a lightly floured surface, roll the pizza dough to about 1/4-inch (6 mm) thickness.
  3. Use a 3-inch (7.5 cm) round biscuit cutter to cut out rounds. Gather scraps, gently press together, and re-roll to cut more. You should get 12 to 14 rounds.
  4. Place the rounds about 1 inch (2.5 cm) apart on the prepared baking sheet.
  5. Spoon about 1 tablespoon (15ml) of pizza sauce onto each round, leaving a 1/2-inch (1 cm) border. Spread gently.
  6. Sprinkle about 2 tablespoons (15g) of shredded mozzarella over the sauce on each round.
  7. Create faces: Cut pepperoni into small triangles for noses or mouth shapes. Place black olive slices for eyes. Press gently into the cheese.
  8. In a small bowl, mix melted butter with garlic powder. Brush the edges of each pizza bite with the garlic butter.
  9. Sprinkle Italian seasoning over the tops. Add a pinch of salt and pepper if desired.
  10. Bake for 12-15 minutes, until edges are golden brown and cheese is bubbly. Let cool on the baking sheet for 2 minutes before serving.

Notes

For best results, use room temperature cheese and don’t overload the faces with heavy toppings. Double the garlic butter mixture for extra flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Reheat in a 350°F (175°C) oven for 5-7 minutes.
