This recipe transforms Brussels sprouts into a caramelized, smoky, and sweet side dish that even the pickiest eaters will love. With crispy bacon and a maple glaze, it’s perfect for weeknights or holiday gatherings.

  • 1 1/2 pounds (about 680 grams) Brussels sprouts, trimmed and halved
  • 6 slices (about 180 grams) thick-cut bacon, chopped into 1-inch pieces
  • 3 tablespoons (60 ml) pure maple syrup (Grade A dark amber preferred)
  • 2 tablespoons (30 ml) extra virgin olive oil
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1/2 teaspoon (3 grams) salt
  • 1/4 teaspoon (1 gram) freshly ground black pepper
  • 1/4 teaspoon (0.5 grams) red pepper flakes (optional)
  • 1/2 teaspoon (1.5 grams) garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and dry the Brussels sprouts, trim the tough ends, and cut each sprout in half lengthwise through the stem. Quarter any large sprouts. Place the halved sprouts in a mixing bowl.
  2. In a small bowl or measuring cup, whisk together the maple syrup, olive oil, apple cider vinegar, salt, pepper, garlic powder, and red pepper flakes (if using) until combined.
  3. Pour the maple dressing over the Brussels sprouts and toss with your hands or a spatula until every sprout half is coated. Let sit for a minute.
  4. Chop the bacon into 1-inch pieces and add to the bowl with the sprouts. Toss gently to distribute.
  5. Line a large baking sheet with parchment paper (optional). Spread the Brussels sprouts and bacon in a single, even layer, placing each sprout cut-side down if possible.
  6. Roast on the middle rack for 20 minutes. Remove the pan, flip the sprouts and stir the bacon using tongs or a spatula. Return to the oven and roast for another 10 to 15 minutes, until the sprouts are deep golden-brown and tender, and the bacon is crispy.
  7. Remove from the oven and let rest on the pan for 2 to 3 minutes. Transfer to a serving dish and serve hot.

Notes

Don’t crowd the pan; use two pans if needed. Place sprouts cut-side down for best caramelization. Watch the maple syrup to prevent burning; tent with foil if it darkens too much. Thick-cut bacon is recommended. Do not skip the apple cider vinegar—it balances the flavors.
