Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/2 cup (60g) all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups (200g) pecan halves, lightly toasted
  • 1/2 cup (120ml) pure maple syrup
  • 2 tablespoons (30ml) bourbon
  • 1/4 cup (50g) light brown sugar, packed
  • 1 large egg, beaten
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a large bowl, whisk together melted butter and granulated sugar until smooth, about 30 seconds. Add eggs one at a time, whisking after each, then stir in vanilla.
  3. Sift cocoa powder, flour, and salt over the wet mixture. Fold gently with a spatula until just combined. Do not overmix.
  4. Pour batter into prepared pan and spread evenly. Set aside.
  5. In a medium bowl, whisk together maple syrup, bourbon, brown sugar, beaten egg, melted butter, vanilla, and salt until smooth. Fold in pecans.
  6. Pour pecan mixture over brownie batter. Spread gently without pressing down.
  7. Bake on middle rack for 35-40 minutes, until edges are set and center jiggles slightly. A toothpick inserted near center should come out with moist crumbs.
  8. Cool completely in pan on a rack for at least 2 hours. For faster setting, refrigerate for 30 minutes after initial cooling.
  9. Use parchment overhang to lift brownies onto a cutting board. Slice into 16 squares with a sharp knife, wiping clean between cuts.

Notes

For best results, use room-temperature eggs and let melted butter cool slightly before mixing. Toast pecans at 350°F for 5-7 minutes for deeper flavor. Cool completely before slicing to allow pecan layer to set. Store in an airtight container at room temperature for up to 3 days, or refrigerate if warm. Freeze individual squares wrapped in plastic wrap and foil for up to 3 months.
