  • ½ cup packed brown sugar (100g)
  • ¼ cup unsalted butter (57g)
  • 2 large eggs, room temperature
  • 2 tablespoons bourbon (30ml)
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves, toasted (200g)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving a 2-inch overhang on two opposite sides.
  2. Spread pecan halves on a baking sheet and toast for 6-8 minutes until fragrant and slightly darkened. Let cool.
  3. In a food processor, combine flour, sugar, and salt. Pulse to mix. Add cold cubed butter and pulse until mixture resembles coarse meal with pea-sized butter pieces. Add cold water and pulse until dough just starts to clump together.
  4. Press dough evenly into prepared pan. Prick all over with a fork. Bake for 16-18 minutes until edges are lightly golden and center looks dry. Set aside to cool slightly.
  5. In a medium saucepan over medium heat, combine maple syrup, brown sugar, and ¼ cup butter. Stir until butter melts and mixture is smooth. Bring to a gentle simmer, then remove from heat. Stir in bourbon and vanilla extract. Let cool for 5 minutes.
  6. In a large bowl, whisk eggs until light and frothy. Slowly drizzle warm maple mixture into eggs while whisking constantly. Whisk until well combined.
  7. Spread toasted pecans evenly over par-baked crust. Pour filling over pecans, ensuring it seeps down around them. Gently shake pan to level.
  8. Bake for 25-30 minutes until filling is set around edges but still has a slight jiggle in the center.
  9. Cool completely on a wire rack (about 2 hours). Use parchment handles to lift slab out of pan. Slice into bars using a sharp knife, wiping clean between cuts.
