Cozy Crockpot Taco Soup with Corn and Black Beans

A hearty and comforting slow cooker taco soup with tender corn, creamy black beans, and a rich, smoky broth. Perfect for busy weeknights or cozy weekends, this easy recipe comes together in just 10 minutes of prep.

  • 1 pound ground beef (85/15 recommended)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (14.5-ounce) can diced tomatoes (fire-roasted preferred)
  • 1 (10-ounce) can Rotel tomatoes and green chilies
  • 3 cups low-sodium beef broth
  • 1 (1-ounce) packet taco seasoning
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, sliced jalapeños

Instructions

  1. Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cook, breaking the meat up with a spoon, until the beef is browned and the onion is translucent, about 6 to 8 minutes. Drain excess fat if desired, leaving about 1 tablespoon for flavor. Add the minced garlic and cook for 1 more minute until fragrant.
  2. Transfer to the slow cooker: Scoop the beef mixture into a 6-quart or larger slow cooker.
  3. Add the canned goods: Add the drained black beans, drained corn, diced tomatoes (with their juices), and Rotel tomatoes (with their juices). Stir to combine.
  4. Add the broth and seasonings: Pour in the beef broth. Sprinkle the taco seasoning, cumin, and smoked paprika over the top. Stir well to ensure the seasoning dissolves evenly.
  5. Cook low and slow: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. For best depth of flavor, cook on low for 7 hours.
  6. Adjust seasoning: About 30 minutes before serving, taste the soup and add salt and pepper as needed.
  7. Serve with toppings: Ladle the soup into bowls and let everyone customize their own with desired toppings.

Notes

For a thicker soup, mash some of the black beans against the side of the slow cooker before serving. If too thick, stir in a splash of broth or water. Let the soup rest on warm for 30 minutes before serving to deepen flavors. Don’t skip browning the meat for best flavor. Watch the salt as canned goods and broth contain sodium.
