  • 8 oz (about 2 cups) sharp cheddar cheese, freshly grated
  • 1 medium yellow onion, diced
  • 2–3 cloves garlic, minced
  • 1/2 cup heavy cream or half-and-half
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Optional garnish: extra shredded cheddar, crispy bacon bits, croutons, fresh chives or parsley

Instructions

  1. In a small skillet over medium heat, melt the butter. Add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  2. Transfer the sautéed onion and garlic to a 4-6 quart slow cooker. Add the frozen broccoli florets and pour in the broth. Stir gently to combine.
  3. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the broccoli is tender.
  4. Optional: Use an immersion blender to blend the soup until smooth, or use a potato masher for a chunkier texture. Alternatively, leave it unblended.
  5. Turn off the slow cooker and let the soup cool for 2-3 minutes. Stir in the heavy cream, then gradually add the grated cheddar cheese, a handful at a time, stirring until fully melted and smooth.
  6. Season with salt and black pepper to taste. Start with 1/2 teaspoon salt and 1/4 teaspoon pepper, then adjust as needed.
  7. Serve immediately, garnished with desired toppings. Pair with crusty bread or a side salad for a complete meal.

Notes

Grate your own cheese for the smoothest texture; pre-shredded cheese can make the soup grainy. Do not add cheese while the soup is boiling hot—let it cool slightly first. Frozen broccoli holds up better than fresh in a slow cooker. For a thicker soup, blend more thoroughly or add a cornstarch slurry. For a lighter version, use half-and-half instead of heavy cream.
