Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or non-stick spray.
  2. Brown the butter: Place ½ cup unsalted butter in a medium saucepan over medium heat. Stir constantly until it foams and brown specks appear, about 3-4 minutes. Remove from heat and pour into a heat-safe bowl. Let cool for 5 minutes.
  3. Make the filling: In a large bowl, whisk together cooled brown butter, brown sugar, and granulated sugar. Add eggs one at a time, whisking well. Stir in vanilla. Sprinkle 3 tablespoons flour and ¼ teaspoon salt over mixture, whisk until smooth. Fold in chopped pecans.
  4. Prepare the topping: In a medium bowl, whisk together 1 cup flour, ½ cup sugar, 1½ teaspoons baking powder, and ¼ teaspoon salt. Cut in cold butter cubes with a pastry cutter or two forks until mixture resembles coarse crumbs. Make a well, add ½ cup milk and ½ teaspoon vanilla. Stir just until combined (batter will be thick and lumpy).
  5. Assemble: Pour filling into prepared dish. Drop spoonfuls of topping over filling, leaving some gaps.
  6. Bake for 35-40 minutes, until topping is golden brown and a toothpick inserted into topping comes out clean. If browning too quickly, tent with foil for last 10 minutes.
  7. Cool on a wire rack for at least 15 minutes before serving.

Don’t skip browning the butter—it’s key for flavor. Toast pecans for extra crunch. Let cobbler rest 15-20 minutes after baking to allow filling to set. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use vegan butter and almond milk.
