  • 6 small flour or corn tortillas
  • 1 tablespoon olive oil or melted butter
  • ½ teaspoon garlic salt
  • ¼ teaspoon smoked paprika (for tortilla bats)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Make the tortilla bats: Stack tortillas and use a bat-shaped cookie cutter to cut out shapes (about 2-3 per tortilla). Brush each bat lightly with olive oil or melted butter, then sprinkle with garlic salt and smoked paprika. Place on prepared baking sheet and bake for 5-7 minutes, flipping halfway through, until golden and crisp. Watch closely to prevent burning.
  3. Start the chili base: While bats bake, heat a small saucepan over medium heat. Add canned chili, drained black beans, cream cheese, cocoa powder, smoked paprika, cumin, garlic powder, and cayenne (if using). Stir constantly until cream cheese is fully melted and mixture is combined, about 3-4 minutes. Mixture should be thick and slightly bubbling.
  4. Layer the dip: Pour chili mixture into an oven-safe skillet or baking dish. Spread evenly. Sprinkle half the shredded cheese on top and gently stir into warm chili. Top with remaining shredded cheese in an even layer.
  5. Broil to perfection: Place skillet under broiler for 2-3 minutes, until cheese is bubbly and golden brown in spots. Watch closely to avoid burning.
  6. Garnish and serve: Remove from oven. Sprinkle with chopped green onions and fresh cilantro. Arrange tortilla bats around edge of skillet or on a small plate for dipping. Serve immediately while cheese is stretchy.
