Ingredients

Scale
  • 2 large apples (Honeycrisp or Granny Smith)
  • 12 slices thick-cut bacon
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon black pepper, freshly ground
  • Pinch of cayenne pepper (optional)
  • 12 toothpicks, soaked in water for 10 minutes
  • 1/3 cup pure maple syrup
  • 2 tablespoons unsalted butter
  • 1 tablespoon apple cider vinegar
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. If using a wire rack, place it on top of the baking sheet.
  2. Wash and core the apples. Cut each apple into 6 wedges (12 total), about 1/2-inch thick at the widest part.
  3. In a small bowl, combine the brown sugar, cinnamon, black pepper, and cayenne (if using). Stir together.
  4. Par-cook the bacon: Place bacon slices on a microwave-safe plate lined with paper towels. Microwave on high for 2-3 minutes until partially cooked but still flexible. Alternatively, cook in a skillet over medium heat for about 2 minutes per side.
  5. Sprinkle the spice mixture over the apple wedges, tossing gently to coat.
  6. Wrap each apple wedge with a partially cooked bacon slice, overlapping slightly, and secure with a toothpick.
  7. Arrange the wrapped apple bites on the prepared baking sheet (or wire rack), leaving space between each one.
  8. Bake for 15-18 minutes, flipping halfway through at the 8-minute mark, until bacon is crispy and apples are tender.
  9. While the bites bake, make the maple glaze: In a small saucepan, combine maple syrup, butter, apple cider vinegar, and salt. Heat over medium heat, stirring occasionally, until butter melts and mixture comes to a gentle simmer. Let bubble for 2-3 minutes until slightly thickened. Remove from heat.
  10. Let the baked bites cool for about 2 minutes on the baking sheet. Transfer to a serving platter and brush or drizzle with warm maple glaze. Serve immediately.

Notes

Par-cooking the bacon is essential for perfect texture—it ensures crispy bacon without mushy apples. Soak toothpicks in water for 10 minutes to prevent burning. For best results, serve immediately while warm and glaze is sticky. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 350°F oven for 5-7 minutes or air fryer at 350°F for 3-4 minutes.
