  • ½ cup heavy cream

  • ¼ teaspoon nutmeg, freshly grated
  • 1 teaspoon soy sauce
  • 2 large yellow onions, thinly sliced into rings
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • ¼ cup cornstarch
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Vegetable oil, for frying (about 3 cups)

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the middle of the oven.
  2. Blanch the green beans: Bring a large pot of salted water to a rolling boil. Add the trimmed green beans and cook for exactly 3 minutes. While they cook, fill a large bowl with ice water. After 3 minutes, drain the beans and immediately plunge them into the ice water to stop the cooking. Let them sit for 2-3 minutes, then drain well and pat dry with a clean kitchen towel. Set aside.
  3. Start the fried onions: While the beans are blanching, place the sliced onions in a shallow dish and pour the buttermilk over them. Let them soak for at least 10 minutes. In a separate bowl, whisk together the flour, cornstarch, paprika, garlic powder, salt, and pepper.
  4. Make the mushroom sauce: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown, about 6-8 minutes. Add the diced onion and cook for another 3 minutes until translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Build the cream sauce: Sprinkle the flour over the mushroom mixture and stir constantly for 1-2 minutes. Slowly pour in the warm milk while whisking continuously to prevent lumps. Add the heavy cream, thyme, salt, pepper, nutmeg, and soy sauce. Bring to a gentle simmer, then reduce heat to low and cook for 3-4 minutes until thickened. The sauce should coat the back of a spoon. Taste and adjust seasoning.
  6. Fry the onions: Heat about 2 inches of vegetable oil in a Dutch oven to 350°F (175°C). While the oil heats, remove the onions from the buttermilk, letting excess drip off, and toss them in the flour mixture. Work in batches to avoid overcrowding. Fry the onions for 2-3 minutes, stirring occasionally, until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season immediately with a pinch of salt while they’re still hot. Repeat with remaining onions.
  7. Assemble the casserole: In a large bowl, combine the blanched green beans with the mushroom sauce. Stir gently until the beans are evenly coated. Transfer to a greased 9×13-inch baking dish and spread into an even layer. Top with about half of the fried onions—save the rest for the final topping.
  8. Bake: Place the casserole in the preheated oven and bake for 20 minutes. The sauce should be bubbly around the edges. Remove from the oven and top with the remaining fried onions. Return to the oven and bake for another 5-7 minutes until the onions are deep golden and the casserole is hot throughout.
  9. Rest and serve: Let the casserole sit for 5 minutes before serving. This allows the sauce to set slightly so it doesn’t run all over the plate. Serve warm.

Don’t skip the soy sauce—it deepens the umami without making the dish taste like soy sauce. If the sauce seems too thick after simmering, add a splash more milk.
