  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon apple cider vinegar

Instructions

  1. In a small saucepan, whisk together 1 cup water, 3 tablespoons pumpkin puree, and 1 teaspoon apple cider vinegar.
  2. Add 1 cup granulated sugar and 1/2 cup packed brown sugar. Whisk until sugars start to dissolve.
  3. Sprinkle in 2 teaspoons pumpkin pie spice, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Whisk until combined.
  4. Place saucepan over medium heat. Stir occasionally until small bubbles form across the surface (about 3-4 minutes). Do not let it boil vigorously.
  5. Once simmering, set a timer for 5 minutes. Stir every minute to prevent sticking. Syrup will darken and thicken slightly.
  6. Remove from heat. Stir in 1 teaspoon vanilla extract.
  7. Let syrup cool in the pan for 5-10 minutes. It will continue to thicken.
  8. Optional: Strain through a fine-mesh strainer into a glass jar for a smoother syrup.
  9. Cool completely at room temperature (about 30 minutes) before sealing the jar.
  10. Refrigerate. Syrup keeps for up to 3 weeks.

Don’t skip the salt—it balances sweetness and enhances flavors. Watch heat to avoid scorching sugars. If syrup crystallizes in fridge, microwave jar for 15-20 seconds and stir. Double batch recommended as it disappears fast.
