A quick and easy Halloween appetizer featuring layers of refried beans, seasoned ground beef, cheese, and a dramatic sour cream spider web design topped with olive spiders. Perfect for parties and guaranteed to impress.

  • 1 can (16 oz) refried beans
  • 1 lb ground beef (80/20)
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 1 cup sour cream
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup cream cheese, softened
  • 1 can (2.25 oz) sliced black olives
  • 1/2 cup diced tomatoes (Roma, seeds removed)
  • 1/4 cup sliced green onions
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 cup shredded lettuce (iceberg or romaine)
  • Tortilla chips (for serving)
  • Optional: 1/2 cup black beans or corn
  • Optional: 1 jalapeño, seeded and minced
  • Optional: 1/2 cup salsa

Instructions

  1. Cook the ground beef in a large skillet over medium-high heat for 6-8 minutes until browned. Drain excess grease.
  2. Reduce heat to medium, add taco seasoning and 1/2 cup water. Simmer for 3-4 minutes until thickened. Set aside to cool slightly.
  3. Spread refried beans evenly on a serving platter or pie dish. Microwave beans for 20 seconds if too thick.
  4. Spoon seasoned beef over beans, leaving a small border. Press down gently.
  5. Sprinkle shredded cheese evenly over the meat.
  6. In a small bowl, mix sour cream and softened cream cheese until smooth.
  7. Transfer sour cream mixture to a piping bag or zip-top bag with a snipped corner. Pipe concentric circles starting from the center outward.
  8. Use a toothpick to drag lines from the center outward and then from the outer edge inward to create a web pattern. Wipe toothpick clean between lines.
  9. Place black olive slices on the web to resemble spiders.
  10. Sprinkle diced tomatoes, green onions, shredded lettuce, and cilantro around the edge, leaving the web visible.
  11. Serve immediately with tortilla chips.

Notes

For best results, let the meat cool slightly before adding cheese to avoid melting it completely. Practice the web design on a plate first. Serve at room temperature. Can be assembled up to 24 hours in advance; add sour cream web and fresh toppings just before serving.
