Instructions

  1. Measure your cereal: Pour 9 cups of Rice Chex into your largest mixing bowl. Set aside.
  2. Make the pumpkin spice coating: In a medium saucepan over low heat, combine the 1/2 cup unsalted butter and 2 cups white chocolate chips. Stir constantly until melted and smooth, about 3-4 minutes.
  3. Add the pumpkin and vanilla: Whisk in the 1/3 cup pumpkin puree and 1 teaspoon vanilla extract until smooth and uniform in color.
  4. Pour over the cereal: Slowly pour the warm mixture over the cereal and gently fold until every piece is coated.

  6. Make the spice-sugar mixture: In a large resealable bag, combine 1 1/2 cups powdered sugar, 3 tablespoons pumpkin pie spice, and 1/4 teaspoon salt. Seal and shake to mix.
  7. Shake it up: Add the coated cereal to the bag, seal tightly, and shake vigorously until every piece is coated, about 30-45 seconds.
